Sweet and Spicy Marinade with Aromatic Bitters

Bitters offer complexity in things like vinaigrettes and marinades.  Here, Runamok’s Aromatic Bitters are used in a sweet and spice-filled marinade that works for chicken, pork, mushrooms, eggplant, and tofu.  The subtle bitterness from gentian root rounds out the sweet maple and acidic cider vinegar. The ‘spiciness’ doesn’t refer to heat but actual spices like cinnamon, clove and allspice making this an all purpose marinade that is full of umami richness.

 

Sweet and Spicy Marinade

 

½ cup olive oil

¼ cup apple cider vinegar

¼ cup maple syrup

1-2 tsp Runamok Aromatic Bitters

2 Tbsp minced onion

1 garlic clove, chopped

½ tsp freshly ground black pepper

1 tsp salt

¼ tsp allspice (optional)

 

Mix all of the ingredients together and submerge chicken or pork for 2-3 hours. Vegetables only need to be marinated for 1 hour. Grill or broil meat as usual. Makes enough marinade for 2-3lbs of meat.
