Gin cocktail with hot honey and peach

Ingredients
.5 oz Runamok Chipotle Morita Hot Honey syrup*
.5 oz peach syrup**
1 oz lemon juice
4-5 mint leaves (plus more for garnish)
Pinch of salt
Instructions
- 1 Add everything to a shaker, shake with ice, including the mint. No need to muddle, the shaking will muddle it for you.

Double strain into a rocks glass with fresh ice and add additional to mint garnish.
*Chipotle Morita Hot Honey syrup: combine 2 parts Runamok Chipotle Morita Honey and 1 part hot water, stir until combined.
**Peach Syrup: wash and chop 2 cups of peaches. Add to a bowl with 1 cup of granulated sugar. Let sit for 1 hour, gently stirring occasionally. As the peaches macerate the liquid will be extracted. After 1 hour, dose with about ⅓-½ cup of warm water (more water will help with sugar dissolve easier, but less water will result in more flavorful, richer syrup). Stir until the sugar has dissolved. Strain and refrigerate the syrup.
The strained peaches can be used to make a jam too.
