The Clover Club is a simple, elegant cocktail that dates back to the pre-prohibition era. It originated from a Philadelphia men’s club of the same name around the turn of the 20th century. Newer variations on the Clover Club sometimes replace the original raspberry syrup with grenadine. With the upgrade to our naturally-sweetened Maple Grenadine in this recipe below, we thought it was fitting to re-brand ours the “Cambridge Club” in honor of our Cambridge, Vermont sugarbush.

The simplicity of the ingredients make this a very approachable introduction to egg white cocktails. The emulsified egg white adds a layer of foam to the top, and brings texture and lightness to the drink.

  • 1 Add gin, lemon, grenadine, then egg white into a cocktail shaker.
  • 2 First, dry shake without ice (this helps the egg to properly froth). Then, add ice and shake again until very well chilled.
  • 3 double strain into a coup glass and serve.
