Blackberry Honey Lemonade

This is a summer refresher that takes advantage of fresh berries. If you don’t have access to blackberries, strawberries, raspberries or blueberries would be a good substitute. Keep in mind that the lemon juice really accentuates the flavor of the honey so if you want a subtler honey flavor substitute an equal amount of granulated sugar. I used 2 tablespoons of Beekeeper’s Cut honey and 1 tablespoon of granulated sugar for this recipe and the honey flavor was very pronounced. If you are a huge honey fan, go nuts and use 3 tablespoons of honey and no sugar.

 

¼ cup fresh lemon juice

2 Tbsp Runamok Honey (Beekeeper’s Cut, High Plains Clover, Lemon Verbena, or Hibiscus Infused)

1 Tbsp granulated sugar

¼ cup blackberries (fresh or frozen)

1 cup water

ice

 

Put all ingredients, except the ice, in a blender and puree until smooth. Pour over ice. Serves 2
