Sometimes we come up with a delicious recipe using our maple syrup but get tripped up with a name. Case in point, these delicious nuggets of vegan banana ice cream, mixed with Bourbon Barrel-Aged Maple and rolled in pecans or chocolate wafers. Bourbon balls? Banana balls? How about Frozen Banana-Bourbon Bites? Whatever you want to call them, they are excellent.
Banana Bourbon Bites
4 ripe bananas
2 Tbsp Runamok Bourbon Barrel-aged Maple
½ cup finely chopped pecans
½ cup crushed chocolate wafer cookies
Peel the bananas, slice and put them in a sealed container. Freeze overnight or for at least 6 hours. In a food processor fitted with a blade, process the bananas until they form a thick paste. Add the Bourbon Barrel-aged Maple and blend.
Working quickly so it doesn’t melt, scoop with a spoon and form into a round shape. Roll the balls in either the pecans or chocolate wafers and put on a tray lined with waxed paper. Freeze immediately. Makes roughly 15 – 20 bites.
