This baked oatmeal is great for house guests, or for making ahead and keeping in the fridge for ready-to-go breakfast before work or school. Customize with your favorite seasonal fruits, nuts, and Runamok maple syrup combinations!

Ingredients

  • ½ cup coconut or vegetable oil

  • ⅓ cup maple syrup

  • 2 eggs

  • 3.5 cups old-fashioned oatmeal

  • 1 cup milk (whole or 2%)

  • 2 tsp baking powder

  • 1 tsp salt

  • 1 tsp cinnamon (optional)

  • Blueberries (or mix in of choice!)

Instructions

  • 1 Preheat oven to 350.
  • 2 In a large bowl, mix together the oil, maple, and eggs. Add the remaining ingredients and stir until well incorporated.
  • 3 Pour into a lightly buttered baking dish (no bigger than 9x13.) Bake for 35-45 minutes depending on the size of the dish.
  • 4 Serve warm topped with more maple syrup, or cool and store in the refrigerator to enjoy throughout the week.
