This baked oatmeal is great for house guests, or for making ahead and keeping in the fridge for ready-to-go breakfast before work or school. Customize with your favorite seasonal fruits, nuts, and Runamok maple syrup combinations!
Ingredients
½ cup coconut or vegetable oil
⅓ cup maple syrup
2 eggs
3.5 cups old-fashioned oatmeal
1 cup milk (whole or 2%)
2 tsp baking powder
1 tsp salt
1 tsp cinnamon (optional)
Blueberries (or mix in of choice!)
Instructions
- 1 Preheat oven to 350.
- 2 In a large bowl, mix together the oil, maple, and eggs. Add the remaining ingredients and stir until well incorporated.
- 3 Pour into a lightly buttered baking dish (no bigger than 9x13.) Bake for 35-45 minutes depending on the size of the dish.
- 4 Serve warm topped with more maple syrup, or cool and store in the refrigerator to enjoy throughout the week.
