Pecan Waffles with Banana Rum Infused Maple Syrup

It is always good to have a few extra waffle recipes to mix up the Sunday morning ritual. These are straightforward with the addition of chopped pecans to give a little nutty crunch. We love this recipe with any of the Runamok syrups but it is particularly good with our new, limited release Banana Rum Infused Maple. Add some extra pecan and sliced banana as a topper and you have Sunday morning bliss.



2 eggs

1 ½ cup milk

¼ cup vegetable oil

2 cups all purpose flour

1 Tbsp baking powder

Pinch of salt

1 Tbsp sugar or maple syrup

¼ cup chopped pecans, plus more for topping


1 banana, peeled and sliced


Runamok Banana Rum Infused Maple Syrup



Combine the eggs, milk and vegetable oil in a medium sized bowl. In a separate bowl, sift the flour, baking powder and salt together. Add the dry ingredients to the wet, plus the sugar or maple syrup. Fold in the ¼ cup of chopped pecans.

Heat the waffle iron and brush lightly with oil or butter.  Using a ladle, spoon enough batter to cover the waffle grid and close the top. Toast until lightly browned. Remove and serve immediately with sliced bananas, extra butter, additional chopped pecans and Banana Rum Infused Maple.
