At the Surfing Deer restaurant in Santa Rosa Beach, FL, one of their most popular cocktails is the “Cube McGee” which features Runamok Smoked Maple Syrup as a star ingredient.

They were kind enough to share the recipe with us, and the origin of the unique name:

Cube was a local entrepreneur in the community for a few decades in the 50s-70s. He had a pet deer (yes, it was named Bambi) that was known for playing in the surf on the Seagrove beach.

The owner of The Surfing Deer restaurant found an old real estate sign (one of Cube’s enterprises) in the wall of the building during the demo phase of buildout. He didn’t know who C.H. McGee, Jr. was at the time but began asking around the community. Everyone who remembered Cube mentioned the surfing deer. Hence the name of the restaurant and the name of the drink.

  • 1 "I wanted a really large ice cube in a really large glass,” bar manager Jake Purvis said. “I just felt like the mystique of Cube was larger than life.”
  • 2 In a 15½-ounce double rock glass, muddle the fruit with bitters and syrup.
  • 3 Add one extra-large ice cube, top with the bourbon, and stir 8 to 10 times.
