Chai Spiced Hot Cocoa

Chai (aka masala chai) is that milky, sweet, mildly spicy tea you can find in Indian and South Asian restaurants.  Spices include cinnamon, clove, fennel, cardamom, black pepper, and ginger. We’ve combined these warming spices of our infused maples along with hot cocoa for an ultra-cozy, cold-weather beverage.

Ingredients

For chai spice blend

  • 3 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
  • 1 tsp ground cardamom

To make the chai

For whipped cream

Instructions

  1. Make Chai spice blend by whisking together the spices. Store any unused spice in an airtight jar.
  2. Combine milk, cocoa, 1 1/2 tsp of the spice blend, and maple in a medium saucepan and whisk until smooth. Simmer over medium heat for 3-5 minutes, whisking until all ingredients are well incorporated.
  3. To make whipped cream, combine all ingredients and whisk until stiff peaks form.
  4. Serve hot cocoa immediately in mugs with whipped cream, garnishing with star anise (optional) and chai spice blend.
