Apple Pancake Rings

Recipe By: Laura Sorkin

These Pancake Apple Rings are very easy, but give the impression that you are a breakfast genius. The recipe is as simple as slicing apple rings and dipping them into the pancake batter of your choice. Then cook them in a pan the same way you do a pancake. Boom, Sunday morning gourmet.

When I tested this recipe, I made a standard homemade pancake batter, but there’s no reason you can’t use Bisquick or something else convenient. Then I peeled and cored an apple and tried a few different thicknesses. I have an inexpensive mandolin-type slicer with a few thickness options and, to skip to the great reveal, thin is better. A thick slice doesn’t cook through before the pancake batter is done, while a super thin slice softens just enough. I have always chuckled at slicing instructions that ask for ¼” or ⅛” as if you can actually measure that. Just slice the apple as thin as possible, preferably with a mandolin.

Any Runamok Maple variety will be excellent with these, but I highly recommend our classic Cinnamon+Vanilla Infused or Bourbon Barrel-Aged Maple.

Instructions

  1. Peel the apple and core it, leaving the rest intact. Using a mandolin or sharp knife, thinly slice the apple crosswise, with the hole in the middle, and set aside.
  2. Make the pancake batter by whisking together the flour, baking powder, sugar, and salt. Add the milk, melted butter, and egg and then gently blend together.
  3. Ready your pan by putting it on medium heat on the stove and then adding a small pat of butter. When the pan is hot, dip an apple ring into the batter to coat it on both sides and place in the pan. Repeat until you have used up the available space in the pan. Cook for a few minutes until lightly browned, then flip. Cook another minute, then remove to a plate.
  4. Top with additional butter and the Runamok Maple of your choice.
