Plum and Blue Cheese Flatbread with Spicy Maple

This is another collaborative recipe with our friends at Blake Hill Preserves. It is a gourmet pizza with tangy plum preserves, spicy arugula, earthy blue cheese, all topped with Hot + Spicy Maple. Complex flavor that is deceptively easy. There are no amounts given - everything is to taste - but estimate one flatbread for 2 people as an appetizer.

Plum and Blue Cheese Flatbread with Spicy Maple

Ingredients

Blake Hill Spiced Plum with Port Jam

Jasper Hill Farm Bayley Hazen Blue

pancetta

sea salt + black pepper

baby arugula

Runamok Hot + Spicy Maple

premade artisan flatbread

Instructions

Preheat oven to 425˚F and line a baking sheet with foil. Place pancetta on foil and cook for about 5 minutes for slightly cooked pancetta or 10 minutes for crispy pancetta.

Evenly spread Spiced Plum jam on your favorite premade artisan flatbread. Then sprinkle salt and pepper to taste over jam. Next place pancetta and blue cheese evenly on top of the jam. Cook in preheated oven for 8-10 minutes.

Remove from oven and let cool slightly. Add arugula, drizzle with Runamok's Hot + Spicy maple syrup, cut into slices, and Enjoy!
