Green Mountain Sloppy Joes

     Sloppy Joes are American comfort food that will satisfy your inner 10-year-old as well as your grown-up taste buds. Though it may have been some time since you ate one, I would argue that this tangy mess of ground meat and sauce, on a bun deserves a comeback. 

     When making a tomato-y meat sauce, my inclination is always to add cumin and chili powder, but this is not chili. A good version has a tomato base, with a hint of sweetness and a few additions like Worcestershire sauce. When researching different versions, I found one recipe from the New York Times that includes a teaspoon of grated orange rind. While at first this seemed out of place, it added a brightness to the sauce that took it up a level. It goes without saying that adding maple syrup gives it more complexity than plain sugar. Ingredients

8 oz tomato sauce

½ cup ketchup

1 tsp brown mustard

1 Tbsp Worstershire sauce

1 Tbsp Sugarmaker’s Cut pure maple or Hot and Spicy Maple

1 tsp orange zest

1 Tbsp vegetable oil

1 medium onion, peeled and diced

2 garlic cloves, peeled and chopped

1 - 1 1/2lb ground beef

Salt and pepper to taste

Hamburger buns

Instructions

In a small bowl, mix together the tomato sauce, ketchup, mustard, Worcestershire, maple syrup, and orange zest. Set aside.

In a large, wide saute pan, add some oil and turn on the heat to medium. Add the onion to the pan and cook until just beginning to brown. Add the garlic and cook an additional minute. Add the ground beef and stir to break it up into smaller pieces. Continue to saute until the beef has browned, about ten minutes.

Pour the sauce into the pan and bring to a simmer. Taste for seasoning but be aware that ketchup and Worcestershire will add plenty of salt. Cook for another five minutes so all of the flavors have been blended.

Serve hot on a hamburger bun.
