What is Beekeeper's Cut Autumn Blossom Raw Honey?
This honey is sweet and floral with a bright finish. The autumn wildflower meadow is replete with asters, rudbeckia, and goldenrod which all contribute to the character of this signature honey. Like our Sugarmaker's Cut Pure Maple Syrup, this Beekeeper's Cut raw honey represents the best raw wildflower honey of the season. It's a smooth, sweet, and packs an intensely floral flavor compared to traditional clover honey. It just may be the best honey we've ever tasted.
Where does it come from?
When we set out to find an apiary with exceptional honey, we were introduced to the Winter family in Wolcott, NY. The Winter family have been producing honey and providing pollination services for over 50 years. Run by Bonnie, Wayne, their son, Dan, and other family members, they manage 2,000 to 2,500 hives that they move throughout the year. The summer and fall months are spent at their home in Wolcott, New York where the Beekeeper's Cut is made and the winter season is divided between Florida and California. In addition to running the family business, Dan Winter is a pillar of the national beekeeping community and currently serving as president of the American Beekeeping Federation. With generations of knowledge about bees, they are a valuable resource in this time when bee populations seriously under threat. How To Use Beekeeper's Cut Autumn Blossom Raw Honey?
Beekeeper's Cut Raw Honey is a rich and delicious honey prefect for adding an extra depth of flavor anywhere regular clover honey is used. Take your toasts, yogurt, granola, fruit, and smoothies to the next level. We also love it with cheese – like our Beekeeper's Grilled Cheese or this Fig, Honey, Goat Cheese Bites. It's even bold enough to stand up in a drink like Honey Mango Lassi or this Mother's Medicine cocktail.
What Does Raw Honey Mean?
Raw honey means this honey is as close as you get get to eating it straight from the hive. It has been minimally filtered and slightly heated (never at a temperature higher than would naturally occur in the hive) so we can safely seal it in a jar, but all the medicinal qualities and beneficial enzymes are all still in tact. If you look closely, you'll be able to see some of the original pollen and propolis still present in the honey, which are what help make honey the superfood that it is. Due to its raw nature, this honey does have the tendency to crystallize (that's how you know it's the good stuff!), which you can learn more about honey crystallization here.
