Honey in Beverages

Thanks to its consistency, honey lends itself beautifully to beverages. Many honey lovers are familiar with adding it to their morning cup of coffee or tea, but hot drinks aren’t the only place honey acts as a great sweetener. Honey does wonders in smoothies and lassis, lemonades and iced tea, as well as elevating cocktails and mocktails to a whole new level. Use any of our honeys as is or cut them with a water to create a delicious simple syrup. Simply boil a 1/4 cup of water and 1/4 cup of honey, let it cool, and you’ve got a premium simple syrup without all the chemicals, additives and refined sugars you’ll find in many store-bought simple syrups.

Sweet + Savory

All our raw, infused and hot honeys work beautifully in sweet/savory recipes. One of our favorite uses is lathering honey on bread prior to grilling it to make an unbelievably delicious grilled cheese. Drizzle it on roasted veggies to give bland flavors a delightful pop, pair any number of our honeys with cheese for a remarkable charcuterie board addition (try topping a sliced baguette with fig, goat cheese and raw honey) or blend our infused honey into salted butter for an addictive salted honey butter.

Hot + Spicy

Forget about basic ‘hot’ honeys using a blend of generic chilies… our Hot Honeys use single variety peppers to achieve a truly remarkable flavor. From our hot + smoky Morita Infusion and tingly Szechuan Peppercorns to the properly ‘hot’ Chile de Arbol Infused Hot Honey – our hot honeys will deliver a punch to your favorite applications. Drizzle hot honey over pizza, mix into a cocktail (spicy margarita anyone?), drizzle over grilled shrimp or slather on fried chicken.

Honey Simple Syrup

Ingredients: 

1/4 c. Runamok honey – any variety, depending on your cocktail of choice

1/4 c. water

Instructions:

 

STOVETOP METHOD: Boil the water in a small saucepan on the stove. When the water is hot, add equal parts honey and stir until dissolved. Once dissolved, remove from heat, cool, and pour into a clean glass container with lid for storage.

KETTLE METHOD: Have a dwindling jar of honey? Boil water in a kettle and add an equal amount of water to the amount of honey remaining directly into the jar. Carefully stir until the honey is dissolved and fully incorporated. Let cool before returning lid to the jar. Please note: honey should be not be refrigerated, but if you glass jar is cold for any reason, do not add hot water directly into the jar.

STORAGE NOTE: Simple syrup will keep in the refrigerator for about a month.

Beekeeper's Grilled Cheese

Ingredients:

4 slices of bread

3-4oz of cheese, sliced or shredded

Softened butter or mayonnaise

Runamok Raw or Hot Honey

Instructions:

1. Heat a skillet on the stove over medium heat.

2. Spread a layer of butter onto one side of each bread slice (4), then spread a layer of honey right on top of the butter layer.

3. Place two of the bread slices honey-side-down onto the skillet. Top both bread slices in the skillet with an equal amount of cheese, then add the remaining two bread slices on top with the honey side facing out.

4. Flip and grill the sandwiches until both sides are golden brown and the cheese is thoroughly melted, then remove from heat (for best results, gently press the sandwiches with a spatula between flips).

5. Cut sandwiches in half for that gooey cheese pull, add some additional honey drizzle, and enjoy.
